Okonkwo moved from Lagos to Austin in 2021 with a borrowed camera and a plan to film restaurant kitchens. The kitchens said no. The city said yes — and the resulting series on pre-dawn Austin has run for 3 years without a sponsor, which she describes as a choice rather than a problem.
